If you are paying a mortgage, and have not refinanced, then this is the time to do so. Contact your bank or perhaps your insurance company to if you qualify. Right now rates are so low you might be able to lower your cost by as much 40%.

Sign up for load management through your utility company to oversee your home’s power usage during peak times. This simple step can save you as much as a $100 a year.

Plan your visits to the ATM and find ones that do not charge you to use them. At a minimum charge of $3.75 per transaction assuming you go at least once a week), finding a compatible ATM without a service charge can save as much as $200 a year.

Recipes for the Month:

When cooking for a family and trying to stay on a budget, you not only want to save money but also enjoy foods that are healthy and tasty as well. In addition, you want some variety so you don’t feel as though you are serving the same ol’ same ol’. Here are 2 recipes that can help you do both. In fact, they each work out to $3 (or less) a serving.

 Chicken Adobo

1/2 lb. boneless chicken thighs  (could use chicken breast, pork or an inexpensive cut of beef, but amount spent will be slightly higher)
2-3 med cloves garlic
1/2 med brown onion, sliced
1/4 cup soy sauce
1/3 cup vinegar
2 tsp. sugar
1 cup water

Pepper and salt to taste 

Cut up the chicken, slice the onions and mince the garlic. Brown the meat. Place everything into a medium pot on low for about 5-10 min. Then cover and cook over medium heat for 30-40 minutes. After 20 minutes peek in the pot to make sure that there is still enough liquid. Add water/soy sauce to taste, if needed. Serve over white or brown rice.

This recipe can be adapted to include your favorite veggies—mushrooms, shallots, pea pods, bell peppers and carrots are great additions, whether added to the rice or as part of the sauce. Quantity of these items may vary, though if using several you may want to keep individual amounts of veggies to ¼ to ½ a cup each.

Stuffed Peppers

4 medium green bell pepper
2 teaspoon extra-virgin olive oil
1 medium onion, chopped
4 clove garlic, minced
1 pound ground turkey (could also use ground beef)
1 1/3 cup cooked rice
salt and pepper
1 teaspoon dried oregano
1 1/3 cup your favorite pasta sauce
8 Tbs shredded mozzarella

Preheat oven to 350ºF.

Fill medium pot about 2/3rds of the way with water. Bring to a boil. Chop off top inch or so of green bell pepper. Take out seeds and white membrane-y stuff. Parboil the pepper for 5 to 8 minutes, until it bends ever-so-slightly when you touch it. Once finished, make sure there's no water in the pepper, and put it in a glass baking dish, open side up.

In a medium skillet, heat oil over medium-high heat. Add onion. Cook for 3 to 4 minutes, until not soft, but crisp-tender. Add garlic. Cook 30 seconds, until fragrant. Add meat. Cook it until it's browned, breaking it up with the back of a spoon as you go. Add rice, oregano, and about 2/3rds of the sauce. Cook until hot/warm throughout. Salt and pepper to taste.

Carefully use your spoon to stuff the pepper with the meat mixture. It should exceed the top of the pepper by about 1/4 to 1/2 inch. Pour the rest of the tomato sauce on top of pepper. Cover dish loosely with tin foil. Bake for about 45 minutes. Uncover. Top with cheese. Bake without cover for 15 more minutes. Cheese should be melted when done.
