Shallow Pocket Tips
Even though temperatures are warming up, it's still not too hot for a good soup. Here is a simple, inexpensive yet tasty soup that can be served alone or make a nice addition to a multi course meal. 
 
Simple Tortellini Soup
1 package cheese tortellini (fresh, frozen or dried) 
1 box of chicken broth-low sodium 
1 can cream of mushroom or chicken soup 
2-3 Tbs. of olive oil 
1 onion, diced 
2 carrots, diced 
2 stalks of celery, diced 
2 cloves garlic, crushed 
1 small bag mixed vegetables 
2 Tbs. Italian seasoning 
Salt and pepper to taste
            If you want to make it heartier, include the following: 
Parmesan cheese (optional) 
Croutons (optional) 
Cubed chicken (optional) 
 
In a Dutch oven (4 to 6 quart) over medium heat add oil then add onion, carrots and celery and sauté until onions are a golden-brown color, then add crushed garlic. Let simmer a few minutes. If using cubed chicken, add it now and cook until slightly golden. Then add broth and cream of soup. Let simmer a few minutes (5-10) then add veggies. 
 
Let simmer until about 20 minutes before mealtime. Then turn heat to high so that soup reaches a low boil then add tortellini. Cook pasta according to directions.
 
Serve with croutons and a sprinkling of Parmesan cheese.
