Remember that most AC units are not able to cool your home to be more than 20* lower than the outside temperature. Rather than trying to get you home to be 68* when it is 90* outside, set your AC to 77* and turn on some fans. Trying to cool your home by a significant difference will result in your AC working extremely hard and will cost you much more than it will to run a fan along with your AC.

Big vacation not in your budget? Make some memories at home. Visit some favorite local places or check out some new spots you have always wanted to explore. Perhaps, plan a midnight picnic in the backyard or invite some friends over for a water day.

Recipes for the Month:

There are many ways to stretch your food budget. Here are some great recipes from Shop Cheap.com to help you stretch your budget and spice up your menu, too!

Two Bean Salsa

  • 3 cups corn (fresh or frozen, lightly blanched or steamed)
  • 2 cups chopped, seeded tomatoes
  • 2/3 cup sliced green onion
  • 4 tsp. minced cilantro
  • 15 oz. can garbanzo beans, drained & rinsed
  • 15 oz. can black beans, drained & rinsed
  • 1 cup minced bell pepper

Shake dressing ingredients in a little jar:

  • 1/4 cup olive oil
  • 1/4 cup + 2 Tbsp. lime  juice
  • 1-1/2 tsp. cumin
  • 1/2 tsp. salt

Toss dressing & veggies, refrigerate 4-6 hours. Serve with your favorite chips or even mix with pasta for a delightful pasta salad.

Brown Sugar Grilled Plums with Lemon Sorbet

  • Cooking spray
  • 2 tbsp. butter, melted
  • 2 tsp. brown sugar
  • 1/4 teaspoon ground cinnamon
  • 4 large or 8 small plums, halved and pitted
  • 2 cups lemon sorbet
  • Fresh mint for garnish (opt.)

Directions

Coat an outdoor grill or stove-top grill pan with cooking spray and preheat to medium-high. In a small bowl, whisk together melted butter, brown sugar, and cinnamon. Brush mixture all over fresh side of plums. Grill plums, flesh side down, 5 minutes until soft. Serve plums with lemon sorbet. Garnish with mint.

***Many fruits are fantastic on the grill! Try grilling peaches, watermelon and pineapple for a sweet treat that requires minimal work.
