Do you love a picnic? Whether it is a quiet picnic in a scenic park with your significant other or a huge family get together where generations of children catch-up on each other’s lives while the kids run around play catch, there is something special about a picnic! So as you get ready for the next family picnic, here are some great ways and place to save money.

Shallow Pocket Tips
If you are going to a picnic and need to bring a dish to pass, then it is important to not only make an item that tastes good, but you want it to be cost-effective as well. So, here are few simple and relatively inexpensive recipes that are sure to please the whole crowd:

Meat & Veggie Kebabs
Purchase wooden kebab sticks (unless you metal ones) and place the sticks in a pan of water. If you want to add some extra essence, you can add seasoning or marinade to the water. Soak the sticks for at least half an hour.

Chose a selection of fresh hardy veggies, (small new potatoes,  cherry tomatoes, pearl onions or regular onions cut into bite size quarters, bell peppers, mushrooms)  the meat of your choice (chicken or steak are great and since you will be cutting into  bite size pieces, you can get twice as many servings than usual e.g. 1 chicken breast will feed 2 people) and, if you’re feeling fancy, perhaps a pineapple.

Cut veggies, pineapple (if used) and meat into” bite-size” pieces—approximately 1.5x 1.5”. If you want to marinate the meat, this is a good time to do it! 

Load the meat and veggies—alternate meat with veggies/fruit to stretch the number of portions-onto the kebab sticks and then grill to desired doneness.
 
Pasta Salad
(From Celebrations.com) 

1 box (16 oz. ) twist or spiral pasta
1 Cup Mayonnaise
1 Cup  Italian or Balsamic Italian Vinaigrette Dressing
5 cups assorted chopped vegetables

Directions
  1. Cook pasta according to package directions; drain and rinse with cold water until completely cool.
  2. In large bowl, combine Hellmann's or Best Foods Real Mayonnaise, Dressing and vegetables. 10 minutes for prep.
  3. Toss pasta with mayonnaise mixture. Serve chilled or at room temperature. Toss, if desired, with additional Mayonnaise before serving.
  4. Use any combination of the following: red, green or yellow bell peppers, Spanish, red or green onions, carrot, tomato, cucumber, olives, artichoke hearts, broccoli, cauliflower or celery.
Variations: For a Seafood Pasta Salad, stir in 1 can (6-1/2 oz.) tuna, shrimp or crabmeat, drained.
Be creative…try adding cut-up cooked chicken, turkey, bacon, ham, pepperoni, Parmesan, cheddar or Monterey Jack cheese or roasted red peppers.

Éclair Pie
1 box graham crackers
1 8 oz. tub whipped topping
2 boxes instant pudding (vanilla is traditional, but cheesecake or lemon are also great!)
1 tub chocolate icing

Make pudding according to package directions and set aside. When set, mix with the whipped topping. Place a layer of graham crackers in a 13×9 pan. Spread a layer of pudding mixture on crackers. Place a second layer of crackers, followed by more of the pudding. Repeat until pudding mixture is finished (2-3 layers) so that final layer is about a half inch from top of pan. Open the icing and peel off the foil on top (be sure to get it all!) then place the icing in the microwave for approx. 10 seconds or until icing has melted. Pour icing on top of crackers and spread so that all the crackers are covered. Place in the refrigerator for 2-3 hour so all layers can set.  Serve when ready.
